       Loretta's Famous Potato Casserole   

This is the easiest dish to make. You will be the hit of the party. You cannot go wrong with this dish and you can make it a 100 ways or add what you like. In red is the ingredients that you need. Everything else is just added as you like


1 big bad of frozen shredded potatoes (keep it frozen, do not thaw)
1/2 as much shredded cheese (add less cheese if you want)
1 cube of butter ( you have to melt this down so it is liquid
1 small regular can of cream of mushroom soup
1 med container of sour cream
1 chopped up onion
1 chopped up bell pepper for color  (optional)
Jalapeno as needed or wanted  (I  like the pickled ones)   
Salt and pepper to taste (red pepper flakes would also be nice for a kick!)
In a bowl mix up the soup, sour cream, onions, bell pepper, salt, pepper and butter put aside
Take out the frozen potatoes and mix it with the cheese for about 15 seconds in the baking dish, then add the bowl of  ingredients. Mix well.
Bake covered with foil at 350 or until golden brown. About 1 hour (make sure the middle is hot and cheese is blended)
If you want you can add crushed corn flakes on the top before you bake it  to make it look even more pretty and add a little crunch to it. Mix a half cube of melted butter into the corn flakes first. 

You can get fancy and add some frozen peas or corn, hamburger meat, green onions around the edges, remember anything goes! Happy cooking and thank you all for coming to our Annual Holiday party. Enjoy!


Prime Rib
It's very easy to make a rub for the prime rib. A box of kosher salt, half as much pepper, a1/4 cup of garlic (you buy in the bottle), a lot of rosemary chopped up fine and that's it. Also I did add  from Costco, its a no salt rub you can buy in the salt and pepper section. I added half of the bottle. But remember I made enough for 12 prime ribs. Your only going to cook one so measure accordingly.  You cant make a mistake. Rub it all over thick. I cook mine in an electric turkey cooker on 300 degrees for exactly 3 hours. They are usually about 15- 17 pound  with no bones.
